Amaranth Crunch Bar

Yield: 12 serving bars

2 Tbsp honey
2 Tbsp molasses
1  Tbsp reduced-calorie margarine
1 1/4 cups puffed amaranth

In saucepan combine honey, molasses and margarine.  Cook over medium heat for 4-7 minutes, stirring constantly, until mixture turns golden brown.  Add amaranth and stir with a wooden spoon until all the amaranth is coated with the syrup.  Press firmly into an 8-inch square pan coated with nonstick cooking spray.  Cut into squares or bars and allow to cool.
